what a waffle

we started out the weekend with breakfast in bed (thanks to my handsome husband).  waffled french toast is now a new favorite in our home.   the recipe is below.  we enjoyed ours with cinnamon and recommend it, yum!

    Waffled french toast
    Serves 2
    Ingredients:

    3 large eggs
    1/2 cup milk
    2 tablespoons melted butter

    1 teaspoon vanilla extract

    Dash of salt

    4 slices of bread

    Directions:
    1. In a shallow container, whisk together all ingredients except bread.
    2. Soak a slice of bread in the mixture, flipping the slice to thoroughly absorb the liquid.
    3. Waffle until golden brown. Waffling time will vary depending on your waffle iron and heat setting.

    We ate ours with a pat of organic butter, more cinnamon and maple syrup.

    afterward we headed to our friends the harrisons lovely home in long beach for a barbeque.  burgers, grilled tofu and veggies, homemade iced tea and card games in the sun drenched backyard.  what a great way to spend the afternoon.  thanks matt and jenna!

    today we went for a walk at dog beach with the morgans and their adorable pooch lucy.  it was great to catch up and check out all the action on the packed beachside.  i think everyone in huntington was out today.  our walk was followed by tamales and fish tacos at fiesta grill and a trip to the craft fair (which was not so crafty) but worth the short drive.  

    what a great way to spend the weekend!

    oh and here is kevin on his first day of work this friday.  he started his position in research and development at the huntington beach location of boeing.  i had to grab a picture, it's kinda like the first day of school.
